Alfalfa sprouts were recognized by the Arabs as the "father of all food". Throughout history, alfalfa have been used as a medicinal herb in various culture, containing high levels of micronutrients. 

The mature alfalfa plant is usually not consumed as the adult leaves are bitter. However, alfalfa sprouts and microgreens (immature seedlings) are fresh and mild tasting, making them a fantastic addition to sandwiches, stir-fries and soups, for a healthy crunch.

Alfalfa is versatile and extremely easy to grow, and is suitable for beginners to gardening. A tutorial on sprouting can be found here. The materials required can be easily found in any home: a mason jar, a screening cloth, rubber band, seeds, and water. The alfalfa sprouts can be harvested in just three to five days.

Alfalfa can also be grown into microgreens, but require sprouting before sowing.
