The Bulls Blood variant of beet microgreens have very attractive large green leaves, and burgundy red stems. These seedlings taste mildly earthy, similar to beetroot mixed with spinach. With its beautiful contrasting colors and distinct crunchy taste, it is a favorite amongst chefs.
The baby leaves are often used to spice up salads. Similar to beetroot, it can "bleed" some red color on your food, hence its variant's name! Bulls Blood Beets are even used to make food colouring. The seeds can also be sprouted in water or grown beyond the microgreens stage into baby beet greens.
