Chrysanthemum, also known as tang-oh, is a vegetable commonly enjoyed over Chinese New Year hotpots for their significance in ushering in prosperity and fortune. The broad leaf chrysanthemum is an edible flower species that is extremely nutritious and provides numerous health benefits.
When harvested young as a microgreen or seedling, it has a mild lettuce, mustardy taste with a hint of herbal bitterness. When harvested as the mature plant, the leaves are slightly more bitter and is best enjoyed as an ingredient in Chinese soups. The beautiful flowers are edible too!
