Borage, also known as starflower, is a traditional medicinal herb, used for various ailments from the ancient Roman time to our present day. The borage plant is especially rich in gamma linoleic acid (GLA), an omega-6 fatty acid that has anti-inflammatory properties.
Borage is moderately easy to grow as a microgreen and tastes just like cucumber. Borage adds amazing flavor and crunch to soups, sandwiches and salads.
Borage seedlings appear succulent-like, with micro hairs along the stem and cotyledon leaves. When grown into the mature plant, its leaves can be used as baby salad greens, and its beautiful flowers are edible too!
